Nobody is aware how wheat transforms to bread. When wheat turns into flour it goes through many difficult and long stages. It can be explained at three stages: harvesting, grinding, and cooking.

     The first stage of this process is to harvest. Actually, it is the most difficult stage. After wheat adequately grows peasants shear it. Then they pick all wheat up to threshing floor, and separate anther from its stem by means of tractors and harvesting machines. This process would be done manually, but in our age, it is being done by means of technological vehicles.

    The second step is to grind that it should be applied by experts. Wheat is taken to mill. Then it is triturated by expert millers. After turned into flour it is sent to bake house. Thanks to the technological improvements, the factory system has started to replace with the small mills and bake houses. But yet, many people willingly use the former system in Anatolia.

    The last and easiest period is to cook. Baker fills flour in a huge cauldron. Then he adds salt, water and leaven to flour. After he kneads dough he gives bread shape to flour. After that he puts it into oven. Bread is ready to serve about six minutes later. Although this stage is easy it has to be applied by a master baker. Because if bread is not cooked by a master all efforts having been done turn out crabs.

      Until bread is served it goes through many hard and gloomy periods. It is a great shame that we don’t consider these stages while throwing away bread.
